I was hoping to see if there is a publicly accessible data sheet that advises the number of hotels in the UK, ideally split into independently owned vs global chains.
I found a sheet that was published in 2011 with similar data but ideally we need the data from the 2018-19 latest.
Is this something you are able to assist with?

The source we have, which is closest to what you want, is the UK Business: activity, size and location release, last published on our website on 2 October 2019 which provides figures for 2019.
This has the number of enterprises running hotels and similar accommodation in the UK in 2019 as 9,930.
We do not have this figure split by ownership but if you contact idbrdas@ons.gov.uk with your query they may be able to carry out some ad hoc analysis which will meet your requirements. This service may be chargeable.
