Estimates of the number of people who work in different occupations in the UK by region are produced from the Annual Population Survey (APS), which is a survey of people resident in households. These estimates are available on Nomis, here:

On this page you can select the country or region (including London) of interest and then choose which period you require (the latest available APS data are for the 12 months ending September 2019). Once you've updated the table based on your selections you will see that the estimates are displayed broken down by employment status and include a full-time/part-time split. The occupations listed are based on the Standard Occupational Classification (SOC) 2010 (see https://www.ons.gov.uk/methodology/classificationsandstandards/standardoccupationalclassificationsoc/soc2010 for further details). The SOC code which best meets your needs is 6221: Hairdressers and barbers.
